Breakfast!!
Yes I know that I do go on a bit about breakfast but I really wanted to demonstrate that regardless of the situation we are in, tired, lack of energy, sleep or just had far too much alcoholic drink like me.
Having a healthy breakfast gets us all ready for the day ahead, and the week ahead as well. Even if you do not want to eat anything, a small portion of something is better than nothing at all
So I have attached a picture of wholegrain toast, scrambled eggs, smoked salmon, fried tomatoes and mushrooms.
The mushrooms and the tomatoes combined makes 2 portions of the recommended 5 portions of fruit and vegetables a day. Mushrooms are rich in copper, which is beneficial for growth of red blood cells, functioning of organs, and regulating nerve transmission. The tomatoes are rich in Vitamin C, which is an antioxidant, controls cholesterol, helps to fight colds and flu, and also helps to absorb iron.
To add to the many benefits of this meal, the toast, mushrooms and tomatoes are all high in fibre. The eggs, and smoked salmon are rich in protein

Looks great! I love smoked salmon and should definitely be eating it more often. It’s such a simple and easy addition to meals that there’s no excuse not to!
ReplyDeleteI love a good hearty, savory breakfast. I don't like sweet food so early in the morning so I usually make eggs or oatmeal. Sometimes I'll have a light sandwich.
ReplyDeleteRoasted vegetables (usually leftovers) with eggs is one of my favorites.
This looks soooo good. I have to try it for breakfast tomorrow.
